Get Vigilant with Vegetables: Tip-of-the-Day #44

DON'T LET YOUR VEGGIES GROW UP TO BE GARBAGE

Make soup! One of my dearest friends taught me how to make an extremely simple and delicious vegetable soup from all the veggies that are on their last leg.

Just pick up some vegetable or chicken stock (Knorr makes a great one in dehydrated bouillon cubes), add it to the specified amount of water, throw in all your veggies and in about an hour you have a steamy, wonderful, nutrient-rich soup on your hands!

It’s perfect for mid-day snacking (for the calorie conscious) and also helps stretch the life of those veggies that otherwise would have gone to waste.

Throw a little pasta in there and some chicken or beef and you've just made a protein-packed meal the whole family can eat.
